Brilliant Baked Chicken Breast
4 boneless, skinless chicken breasts
Galeos Miso Salad Dressing and Marinade

Mix
together enough of the above ingredients to half cover chicken breasts
in a small casserole dish. Sprinkle with salt and pepper. Put in oven at
350° for 35 minutes. Makes the tenderest chicken in the world.
Blisteringly Good Bloody Mary
2 ounces Absolut vodka
4 ounces V8 juice
½ tsp freshly grated horseradish
2 dashes Worcestershire sauce
3 dashes Pura Vida! Gourmet Chile Pepper Sauce
Pinch of coarse sea salt
Pinch of freshly ground pepper
¼ ounce fresh squeezed lemon juice
Pinch of celery salt
Lemon or lime wedge or
Pickled jalapeño
Combine the vodka, V8, horseradish, Worcestershire sauce, Pura Vida! Gourmet
Chile Pepper Sauce, salt, pepper, lemon juice and celery salt in a
cocktail shaker over ice and shake. Garnish with lemon or lime, or dare
to be different and try a pickled jalapeño. Fabulous.
Perfect Pico de Gallo
1½ cups seeded, diced tomatoes
1/8 cup diced sweet onion
1/8 cup diced red onion
1 tbsp minced garlic
Juice of 2 limes
2 tbsp chopped fresh cilantro
2 tbsp (or to taste) Pura Vida! Gourmet Chile Pepper Sauce
Salt & Pepper

Jambalaya to Die For
4 big sweet onions, finely chopped
8 cups water
4 cups uncooked rice
1 bell pepper, chopped
2 banana peppers, chopped
3-5 crushed garlic cloves
2 bundles green onions, chopped
2 lbs hot Italian sausage, chopped
1 whole chicken, cut up
salt, pepper and onion powder to taste

In a deep, heavy pot, brown
sausage and chicken together, then place to the side. Sautee onion and
garlic in a little oil at the bottom of the pot, add chicken, sausage
and enough water to cover. Season to taste and cook until chicken is
tender. Add banana peppers and green onions, cook for about 15 minutes,
then add rice, cover and simmer for 15 to 20 minutes or until rice is
almost done. Mix with large spoon. Cover and simmer over low heat until water
is gone and rice is tender. Put a bottle of Pura Vida! Gourmet Chile Pepper Sauce on the table. You can never get enough!
